OK, so I read the article about Grekobohairic versus true Bohairic, and it said at the end that sometimes true bohairic is mistakenly called Sahidic, which leads me to a question. If a book or article says its teaching Sahidic, then is it usually actually teaching old bohairic? And when something says it teaches Bohairic, does it usually mean old bohairic or greko-bohairic?

GreekoBohairic and True Bohairic are exactly the same in writing (spelling) and grammar the ONLY difference is in the letter(s) pronunciation

For example
Ⲡⲉⲛⲓⲱⲧ ⲉⲧϧⲉⲛ ⲛⲓⲫⲏⲟⲩⲓ (our father who is in the heaven)
in GreekoBohairic you pronounce this like that "Pen-Iwt et-khen-ni-fi-ou-we"
While the original pronunciation is (True Bohairic) "ban-iwt ad-khan-ni-fawe" the first three "A" are short while the last one is long

while Sahidic dialect is different in Spelling, Grammar and some letter pronunciation
so our father who is in the heaven is written like that in sahidic
Ⲡⲉⲛⲉⲓⲱⲧ ⲉⲧϩⲉⲛ ⲛⲓⲙⲡⲏⲟⲩⲉ

I’ve just started learning Coptic and it is difficult for me to differentiate between Bohairic and Sahidic dialects. Could you indicate what particular dialect is used in the following documents:
http://www.coptic.org/language/handbook1.html
http://www.coptic.org/language/coptic_lesson_intro.pdf
http://www.coptic.org/language/ra.html
http://www.coptic.org/language/handbook3.htm
http://www.coptic.org/language/miltonVerb.pdf
http://www.coptic.org/language/synopsis.html
http://www.coptic.org/language/coptvocabexx.pdf
http://www.coptic.org/language/pisentverbs.pdf
http://www.coptic.org/language/georgy/common.htm

Thank you in anticipation.

Thank you very much.
As far as I can judge from you explanation this dictionary (http://www.angelfire.com/art/wafikadly/coptic_excel.zip) represents Bohairic:
ⲓϧ = demon .
