We have been working on a dictionary of our own
http://danacbe.com/Wiki/index.php/Main_Page
I didn't want to use wikitionary because I don't know who will manage the Coptic section if it will be managed at all
there is a board in the forum dedicated to the dictionary project http://kame.danacbe.com/index.php/board,13.0.html
the problem we are currently facing is that, "we don't know how to put/organize the examples of each word"
please check the topic on the board, we need more contributors and suggestions too

I think that it is better to give the dictionary a rather Coptic flavoured-name than an anglicised one. My suggestion:
ⲁⲓⲅⲓⲡⲧⲁⲛⲥⲁϫⲓ
ⲕⲟⲡⲧⲁⲛⲥⲁϫⲓ
ⲁⲛⲥⲁϫⲓⲁⲓⲅⲓⲡⲧⲟⲥ
ⲛⲟϥⲣⲓ ⲣⲟⲙⲡⲓ ˋⲙⲃⲉⲣⲓ
ⲟⲩϫⲁⲓ ϧⲉⲛ ˋⲠϭⲤ

you replaced the English name with Greek names
I know some people likes to call words from Greek origin "Coptic"
But I "personally" like to call it "Greek"
for me English is better than Greek (Coptic is better than them all of course Smiley )

ⲁⲛⲥⲁϫⲓⲛⲭⲏⲙⲓ
ⲟⲩϫⲁⲓ ϧⲉⲛ ˋⲠϭⲤ

yes, that's better but its a little bit long
also the name you suggested is in "Bohairic" dialect but the dictionary should be for all dialects
also we are too late we have been using the current name for quite long time and there is many topics mentioned this name we can't change it that simple
also the Coptic name is harder to remember for those who didn't study Coptic but almost no body this days doesn't know english
