I do not think you can find good coptic grammar exercises. if you find this tell me.

For Sahidic, but coptic in 21 lessons book
It has lots of exercises

Its nice to have the grammar of all dialects combined
But the book is very old so not sure if its accurate.

Also beware of pronunciation:
Egyptians never in their language history (and until now) pronounced the letter th nor v
This bizarre pronunciation was introduced in the 1850 and was adopted by many scholars
