I think if we are talking about watch as in wrist watch, this started in the 16th century in Europe when Coptic was on its deathbed. This verse from Isaiah 38:8 mentions the degrees of shadow on a sundial using the word ⲁⲛⲁⲃⲁⲑⲙⲟⲥ & ⲧⲱⲧⲉⲣ (lit. stair step), in Sahidic the word ⲧⲱⲣⲧⲣ. I doubt that we can use the word as is. But this is the closest I could get.
