This is the most complete dictionary that I am aware of!

It looks good though it's lacking some words. I couldn't find the word ⲙⲏⲓⲛⲓ.
I personally think that the future going forward is Wikitionary.

Its free, open and allow contributions same way as Wikipedia. (It's even the same company)

wikitionary is a much bigger organization and they're supporting Coptic now.
I strongly recommend contributing there instead if you like
