This should do it (in the Bohairic dialect):
   ⲁⲛⲟⲕ ϣϫⲟⲙ `ⲉⲛⲁⲩ `ⲉ`ⲛⲭⲁⲓ ⲛⲓⲃⲉⲛ
   Pronunciation: Anok Esh-Jom Anaw A-Enkai Niwan
   A shorter version: ϯϣⲛⲁⲩ `ⲉ`ⲛⲭⲁⲓ ⲛⲓⲃⲉⲛ (Pronunciation: Di-Esh-Naw A-Enkai Niwan)

In Sahidic, it should be something like (but not so sure; someone please correct me if I am wrong):
   ⲁⲛⲟⲕ ϭⲟⲙ ⲉⲛⲁⲩ ⲉⲛ̅ⲕⲁ ⲛⲓⲙ (Pronunciation: Anog Gshom Anaw A-Enka Nim)
   A shorter version: ϯϣⲛⲁⲩ ⲉⲛ̅ⲕⲁ ⲛⲓⲙ (Pronunciation: Di-Esh-Naw A-Enka Nim)

ⲟⲩϫⲁⲓ,
ⲡⲓⲙⲟⲩⲓ

Although ⲁⲛⲟⲕ and ϯ both mean "I", each has a different use and one can't be used instead of the other.
For example:
ⲁⲛⲟⲕ ⲡⲉ ⲁⲇⲁⲙ (I am adam) is correct, whileϯ ⲡⲉ ⲁⲇⲁⲙ is wrong.
ⲁⲛⲟⲕ is used when I am talking about my identity and usually followed by a noun (I am adam, I am son of George, I am a poor person, I am the king, I am your god, ....).
If the sentence has a verb or adjective, you can't use ⲁⲛⲟⲕ. Use ϯ instead  (I am hungry, I am sad, I am cleaning the room, I can do this, ......)
In the sentence below (I can see everything), clearly has the verb "see" and it's in present tense so we can not use ⲁⲛⲟⲕ
ϯϣⲛⲁⲩ `ⲉ`ⲛⲭⲁⲓ ⲛⲓⲃⲉⲛ is the correct translation in this case.I don't have enough knowledge about Shaidic so can't comment on that

You are definitely right, I just relied on a wrong example from the Coptic/English Wiktionary (Ref: https://en.wiktionary.org/wiki/%CF%A3%CF%AB%E2%B2%9F%E2%B2%99).

Hence, I believe the first sentence, in Bohairic, should be (again someone correct me if I am wrong):

ⲟⲩⲟⲛ ϣϫⲟⲙ `ⲙⲙⲟⲓ `ⲉⲛⲁⲩ `ⲉ`ⲛⲭⲁⲓ ⲛⲓⲃⲉⲛ (Pronunciation: Woun Esh-Jom Em-moi Anaw A-Enkai Niwan)
Literally: there is power with me to see everything.

Similar to:

(Ref: Sameh Younan "So, you want to learn Coptic?" P. 214)

And I believe, in Sahidic, it should be:
ⲟⲩⲛ̅ ϭⲟⲙ ⲙ̅ⲙⲟⲓ ⲉⲛⲁⲩ ⲉⲛ̅ⲕⲁ ⲛⲓⲙ (Pronunciation: Won Gshom Em-moi Anaw A-Enka Nim)

The Sahidic version, is based on the following example:
